Welcome to my Island and welcome to my kitchen.
My name is Chef Blackie and I own Blackie's Island Cooking.
I've been preparing traditional island cuisine for my guests
for more than twenty years.
If you haven't tried island cooking, you are in for a treat.
On Roatan, typical is fare
Red beans
White rice
Home made corn tortillas
Plantains
For protein, I like to use:
Shrimp
Lobster
Chicken
Fish (your catch?)
Conch
Attention: Those of you who caught a fish (or two) today...head on home with your prize.
I'll be right behind you to prepare that trophy fish and all of the fixings for your friends and family.
My favorite preparation for fish is to roll the filets in fresh (I mean right off the tree)
grated coconut and quick saute them.
If you prefer, your catch can also be grilled, breaded or broiled.
And, don't forget dessert.

It's tough to decide....lemon, coconut, key lime?
